Though these minor components represent less than 1% of palm oil composition, they play a significant role in the stability and refinability of the oil, in addition to increasing its nutritive value.<\/span><\/p><ul><li style=\"text-align: justify;\"><span style=\"color: #000000;\"><strong>Carotenoids<\/strong><\/span><br \/><span style=\"color: #000000;\">Crude palm oil contains 500\u2013700 ppm carotenoids, mainly as alpha- and beta-carotenes, the precursors of Vitamin A. Carotenoids are usually thermally destroyed during the deodorization stage of the refining process. Their presence, however, offers some oxidative protection to the oil by themselves being oxidised first prior to the triglycerides.<\/span><\/li><li style=\"text-align: justify;\"><span style=\"color: #000000;\"><strong>Tocopherols\/Tocotrienols<\/strong><\/span><br \/><span style=\"color: #000000;\">Crude palm oil contains 600\u20131000 ppm tocopherols and tocotrienols. These levels are slightly lower in refined palm oil. The major forms of tocopherols and tocotrienols present in palm oil are alpha-tocopherol and gamma-tocotrienols. Tocopherols and tocotrienols are antioxidants and provide some natural oxidative protection to the oil.<\/span><\/li><li style=\"text-align: justify;\"><span style=\"color: #000000;\"><strong>Sterols<\/strong><\/span><br \/><span style=\"color: #000000;\">The sterols in crude palm oil are in the form of sitosterol (218\u2013370 ppm), campesterol (90\u2013151 ppm), stigmasterol (44\u201366 ppm), cholesterol (7\u201313 ppm) and others (2\u201318 ppm). Upon refining, their levels are reduced to 68\u2013114 ppm, 26\u201330 ppm, 12\u201323 ppm and 2 ppm respectively. It must be emphasised that the cholesterol levels in both crude and refined palm oil are lower than levels in most vegetable oils.<\/span><\/li><li><p style=\"text-align: justify;\"><span style=\"color: #000000;\"><strong>Phospholipids and Triterpene Alcohols<\/strong><\/span><\/p><p style=\"text-align: justify;\"><span style=\"color: #000000;\">These components are present in extremely minute amounts in crude palm oil. The main forms of phospholipids are phosphatidylcholine, phosphatidylethanolamine, phosphatidylinositol and phosphatidylglycerol.
